Lavash Wraps, Five Ways: Easy Lunches for the Week

One pack of lavash, five easy wraps. A week of lunches that beat anything from the food court — and come together in minutes.

Lavash was practically invented for wrapping. Its thin, flexible sheets hold a generous filling without the bready bulk of a roll, which makes it perfect for fast, satisfying lunches. Here are five combinations to see you through the week.

The rolling technique

The trick to a wrap that holds together is restraint and order. Spread sauce first so it glues the fillings, keep everything to the lower third of the sheet, fold the sides in, and roll firmly. A quick toast seam-side down sets it shut.

  • Chicken and garlic yogurt with parsley and pickled onion.

  • Pan-fried halloumi with rocket, tomato and a dusting of sumac.

  • Mezze-style with hummus, falafel, cucumber and mint.

  • Breakfast wrap with scrambled egg, spinach and feta.

  • Smoked salmon with cream cheese, dill, capers and lemon.

Make it meal prep

Wraps with sturdier fillings (chicken, halloumi, falafel) keep well for a day in the fridge. Wrap them tightly in paper. Save wetter fillings for the day you eat them.

Ingredients

  • 1 sheet fresh lavash per wrap
  • Wrap 1 - Chicken & herb: roast chicken, garlic yogurt, parsley, pickled onion
  • Wrap 2 - Halloumi & greens: pan-fried halloumi, rocket, tomato, sumac
  • Wrap 3 - Mezze: hummus, falafel, cucumber, mint, chilli
  • Wrap 4 - Breakfast: scrambled egg, spinach, feta
  • Wrap 5 - Smoked salmon: cream cheese, dill, capers, lemon

Method

  1. Lay a sheet of lavash flat and keep fillings to the lower third.
  2. Spread any sauce first to act as glue, then layer fillings without overloading.
  3. Fold in the two sides, then roll up firmly from the filled end.
  4. For a warm, sealed wrap, toast seam side down in a dry pan for 1-2 minutes.
  5. Slice in half on the diagonal and serve, or wrap in paper for lunch on the go.
