Crispy Lavash Cheese Rolls (Beoreg)

Golden, crunchy cheese rolls made by wrapping lavash around a simple feta filling. A crowd-pleasing snack in half an hour.

Beoreg (also spelled boreg or börek across the region) is the kind of snack that vanishes the moment it hits the table. Traditionally made with delicate filo, this lavash version is faster and just as moreish, crunchy on the outside, molten cheese within.

Why lavash works so well

Lavash is pliable enough to roll tightly without cracking, then crisps up beautifully in the pan. It gives you all the crunch of pastry with none of the fiddly layering.

Tips for the best rolls

  • Do not overfill, a thin line of filling rolls tighter and crisps more evenly.

  • Seal the seam well so the cheese stays inside.

  • Cook seam side down first to set the shape.

  • Serve straight away; they are best hot and crisp.

Make it your own

Swap the parsley for dill or mint, add a little grated kashkaval or haloumi, or fold through wilted spinach for a spanakopita style roll. They also freeze well before cooking, handy for unexpected guests.

Recipe

Serves: Makes about 12 rollsPrep: 15 minCook: 15 min

Ingredients

  • 4 sheets fresh lavash
  • 250g feta, crumbled
  • 100g grated mozzarella
  • 1 egg, lightly beaten
  • Small handful parsley, finely chopped
  • Butter or olive oil, for cooking

Method

  1. Mix the feta, mozzarella, egg and parsley into a rough paste.
  2. Cut each lavash sheet into long strips about 10cm wide.
  3. Place a spoonful of filling at one end of each strip and roll up, tucking the sides in.
  4. Brush the seam with a little water or egg to seal.
  5. Pan fry in butter over medium heat, turning, until golden and crisp all over (about 4-5 minutes). Or bake at 200°C for 12-15 minutes.
  6. Drain briefly and serve warm.
