Lavash Storage & Reheating Guide

Fresh lavash

Fresh lavash is best within 2–3 days. Keep it sealed in its bag at room temperature, or in the fridge for a little longer. If it firms up, it is not stale - lavash is designed to be revived.

How to refresh it

Sprinkle the sheet lightly with water (or pat with damp hands).Warm in a dry pan for 20–30 seconds a side, or in a low oven wrapped in foil.Cover with a clean tea towel for a minute so the steam softens it through.

Freezing

Lavash freezes beautifully. Freeze it on the day you receive it, sheets flat, in a sealed bag. Thaw what you need at room temperature for about 20 minutes, then refresh as above. Avoid refreezing thawed sheets.

A tip for khash

For khash, a day of air-drying actually improves the texture - drier sheets soak up the broth without falling apart.
