15-Minute Lavash Pizza: The Easiest Weeknight Dinner

Thin, crispy and ready in 15 minutes — lavash makes the fastest pizza base you will ever cook. Here is the method and our favourite toppings.

When dinner needs to happen fast, lavash is your friend. Because it is already thin and baked, it crisps in minutes into a cracker thin pizza base, no proving, no rolling, no fuss. It is the kind of dinner you can put together while the oven preheats.

Why lavash makes a great pizza base

A traditional pizza base is all about managing wet dough and a hot oven. Lavash skips the hard part: it is sturdy enough to hold toppings but thin enough to shatter crisp. The result is closer to a Roman style scrocchiarella than a doughy takeaway pizza.

The method

  1. Preheat hard, a hot tray is the secret to a crisp base.

  2. Go easy on the sauce, or the base will steam instead of crisp.

  3. Do not overload with toppings; lavash likes a light hand.

  4. Watch it closely after 6 minutes - it goes from golden to too dark quickly.

Topping ideas

  • Margherita: passata, mozzarella, fresh basil.

  • Garden: cherry tomatoes, olives, red onion, oregano.

  • Breakfast: crack an egg in the centre for the last few minutes.

  • Mezze: a swipe of labneh, dukkah and rocket added after baking.

A note on freshness

Slightly older lavash actually works brilliantly here. The oven revives it. It is a perfect way to use up the last sheets in the pack.

Recipe

Serves: 1–2Prep: 5 minCook: 8 min

Ingredients

  • 1 sheet fresh lavash
  • 3 tablespoons tomato passata or pizza sauce
  • 1 cup grated mozzarella
  • Toppings of choice (e.g. cherry tomatoes, olives, basil, prosciutto)
  • 1 tablespoon olive oil
  • Pinch of dried oregano, salt and pepper

Method

  1. Heat your oven to 220°C (fan) and place a tray or pizza stone inside to warm.
  2. Lay the lavash on a sheet of baking paper and brush lightly with olive oil.
  3. Spread the passata thinly, leaving a small border, then scatter over the mozzarella.
  4. Add your toppings and a pinch of oregano, salt and pepper.
  5. Slide onto the hot tray and bake for 6-8 minutes until the cheese melts and the edges crisp.
  6. Finish with fresh basil, slice and serve immediately.
