Lavash vs Pita and Other Flatbreads: What’s the Difference?

Lavash, pita, naan, tortilla — they are all flatbreads, but they are not the same. Here is how lavash compares and when to reach for it.
The world is full of wonderful flatbreads, and they often get lumped together. But each one has its own texture, history and best use. Here is where lavash fits in.
Lavash
Thin, soft and pliable, lavash is made from flour, water and salt and baked very hot and fast. It has little to no leavening, so it stays flat and flexible, ideal for wrapping and tearing. Dried, it keeps for a remarkably long time.
Pita
Pita is leavened with yeast and puffs dramatically in a hot oven, creating its signature pocket. It is thicker and breadier than lavash, perfect for stuffing with falafel or souvlaki, but less suited to a tight wrap.
Naan
Naan is enriched with yogurt or milk and often ghee, giving it a soft, pillowy, slightly chewy texture. It is richer than lavash and built to scoop up saucy curries.
Tortilla
Wheat tortillas are the closest cousin to lavash in use - both are thin and great for wrapping but tortillas usually contain fat and are cooked on a dry griddle rather than a searing oven wall, giving a different, softer chew.
So when should you reach for lavash?
When you want a thin, flexible wrap that will not crack or overpower the filling.
For tearing and sharing alongside soups, stews and dips.
For crisp, cracker-thin pizzas and baked snacks.
When you want a bread that freezes and revives without losing its character.
